Airem Winery is located in the city of Granada in southern Spain, at the foothills of the Sierra Nevada. Natural purity, care for nature, and handcrafted brewing are the principles that Airem Winery has adhered to since its establishment. The distillery uses spring water sourced from the melting snow of the Sierra Nevada, considered to be the purest water source in Spain for distillation. The raw materials come from organic Pilsner malt, famous for its agriculture, located in the northern Spanish region of Castile. Using 100% handcrafted copper stills, they produce whisky with a clean quality and rich flavor.
This whisky is made using a double distillation method, with the distillation process lasting two days. After the first distillation, a liquid with an alcohol concentration of 25%-30% is obtained. On the second day, during a more refined distillation, the heads and tails of the distillate are removed, retaining only the middle part known as the "heart," resulting in a distillate with an alcohol concentration of about 60%, pure, transparent, and aromatic. It is then aged for at least 15 years in Spanish PX sherry oak barrels that are over 20 years old. The cost of PX sherry casks is extremely high, and they are rare, making them the top-tier dream product among all sherry casks. Finally, spring water sourced from the melting snow of the Sierra Nevada is used to adjust to the optimal alcohol concentration.
【Tasting Notes】
Color: A rich and deep amber reminiscent of mahogany, gently swirling the glass reveals the liquid flowing slowly like syrup, highlighting its robust structure.
Aroma: The enticing aroma is filled with the sweet scent of dried fruits, with concentrated flavors of sun-drenched raisins and figs, fully showcasing the characteristics of the PX sherry cask. Rich layers of sweetness emerge, leading to honey, toffee, and brown sugar, with a final hint of vanilla and oak, making the aroma even more lingering.
Palate: As the liquid touches the palate, a magnificent symphony of flavors unfolds on the taste buds. The PX sherry cask aging produces rich notes of black cherry and date sweetness, accented by honey and caramel, finishing with warm spices of cinnamon and nutmeg, adding layers and perfectly concluding the mouthfeel.
Finish: Accompanied by the aroma of sherry, the flavors of dark chocolate and oak blend together, leaving an unforgettable impression.
